Sodium aluminium phosphate (SAlP) describes the inorganic compounds with The most common SAlP has the formula NaH14Al3(PO4)8·4H2O and.

The acidic sodium aluminium phosphates are used as acids for baking powders for the chemical leavening of baked goods. SAlPs are advantageous because they impart a neutral flavor. Upon heating, SAlP combines with the baking soda to give carbon dioxide. Most of its action occurs at baking temperatures, rather than when the dough or batter is mixed at room temperature.

The chemical formula of the acid sodium aluminum phosphate is NaAl3H14(PO4)8 · 4H2O. The alkaline product is mixture of an alkaline sodium aluminium.

The acid (E541 (i)) is used as an raising agent in baked goods.

It produces a large volume and a tender flexible texture with fine grain. Sodium aluminum phosphate is a heat-activated leavening agent. SALP contains 2.1 per cent sodium (2,100mg/100g for SALP 138) and a limited amount of calcium. It has a neutral taste.

The alkaline version (E541(ii)) is used in processed cheese.

The alkaline product is mixture of an alkaline sodium aluminium phosphate (approximay Na 8 Al 2 (OH) 2 (PO 4 ) 4 ) with about 30% dibasic sodium phosphate. The chemical formula of the acid sodium aluminum phosphate is NaAl 3 H 14 (PO 4 ) 8 · 4H 2 O. Both are white odorless powders.

SALP is not allowed in Japan and some European countries due to concerns with aluminum.

SALP is widely used in cake, pancake and biscuit mixes.

The synonym for the basic sodium aluminum phosphate is kasal. There are actually is two different products: an acid sodium aluminum phosphate and an alkaline sodium aluminum phosphate. Sodium aluminum phosphate| SALP is synthetically produced from aluminum, phosphoric acid and sodium hydroxide.

The main use for SODIUM ALUMINUM PHOSPHATE, is as a leavening agent or action for flour mixes, enhancing the properties of the formula ingredients.

The SODIUM ALUMINUM PHOSPHATE, has a different performance profile than other leavening agents; it reacts slowly with the Sodium Bicarbonate in the mixing stage, there is only a 20 to 30 % Carbon Dioxide delivery from available. The difference is released during the oven stage. IN FOOD INDUSTRY: The main use for SODIUM ALUMINUM PHOSPHATE, is as a leavening agent or acid for mixing baking powders, this is a new product in the baking industry.

MONOCALCIUM PHOSPHATE SODIUM ALUMINUM PHOSPHATE SODIUM ALUMINUM SULFATE SODIUM ALUMINUM PHOSPHATE USES.

If it is used a baking powder having only Sodium Bicarbonate, the final product is yellowish, will have high pH, and it will not be so fluffy as when using with MONOCALCIUM PHOSPHATE.
